I believe they make a tall deck version of the block that will allow you to get over 500ci. GMPP did an article on it a little while back, I think they got around 511ci.

This month's Hot Rod had a good artiicle on crate engines. The did the 6.0L with LS7 heads and internals with a carb. 599 HP. Not too shabby!
