    What's for Dinner?

    The only time I enjoy cooking is when I am camping. When I am at home I don't usually cook. I am to tired when I get off work. A bowl of Cereal or some tacos from the local taco shop is fine with me. I try to cook at least one good meal a week so tonight I am cooking beef stew. I have not cooked that in a long time. Easy, simple comfort food. Beef, potatoes, Celery carrots and a little extra yams and mushrooms.

    Grilled swordfish and a salad... I'm starving right about now so I'm off to get cooking

    But generally I agree with you taco shop and beer or something easy It's just not quite as much fun when you're only cooking for one lol

    I'm a stud at the following:

    Manchiladas -

    In a coated pyrex baking dish, layer the bottom with corn tortillas, cooked ground beef or chicken, diced green chiles, black olives, cooked corn, grated cheese and then top with enchilada sauce. Repeat these steps until dish is filled. I usually cook at 375 degrees for 30-40 minutes.

    Cheesy Potatoes -

    Heat the potatoes in the microwave for a few minutes to soften the potatoes. I usually buy a bag of Healthystart; they can be found in the eggs/yogurt sect. One can of Campbell's Cream of Mushroom soup thinned with milk or water; your choice. Layer the potatoes in a coated pyrex dish. Coat with mushroom mix and then layer with cheese. Again, repeat steps. Cook at 375 degrees for 45-60 minutes. The top will brown and darken. Do not worry, it seals the inside and cooks the potatoes all the way through. Add diced ham or whatever to spice it up. These go good with a steak, pot roast, etc.

    Healthy Pasta Concoction -

    Cooked penne pasta (2-3 cups). 1/2 jar of diced sun-dried tomatoes, one can of diced black olives, one small container of feta cheese (flavored if you like), one small package of grated parmesean cheese and diced, grilled chicken breast (optional). Mix ingredients together in a large bowl with a liberal coat of extra virgin olive oil (Be careful, tomatoes contain oil already). Use garlic salt for flavoring (sparingly). This is always better if left to cool overnight.

    Good stuff as far as I'm concerned.
