Under Armor is not a good idea due to the synthetic material in the event of a fire, simpson makes a really good under shirt that keeps your body at moderate temp.
If you look on line, you can find the under armor shirts that they make for the Military, that are made for tank crews and are designed to work as a wick away.

Go really fast, the wind will cool you off
Drink lots of water, and pour water on yourself if you are really really hot. Dont drink booze the night before, it will leave you dehydrated.
Make sure you are peeing a lot and not pissing dark yellow stinky pee. If you are, drink more water or Gatorade and less energy drinks!

During the SCORE Henderson 4th of July race 5 years ago, I drove the black 57' Chevy of Larry Schwocofer (now owned by Jim Patelli). My co-driver Eric Record and I, installed an ice chest where the back seat would go (it was a 2-door sedan with lots of room back there), knowing it would come in handy if we got stranded. We put in gatorade, soda, water, two beers, and lots of ICE. Almost to the end of the first Henderson lap, and behind the curved glass of that classic black Chevy (racing in class 8) the black steering wheel was getting to hot to touch. Now, I'm in construction, and I have pretty tough hands, so I dont wear gloves. You know it had to be getting hot in there if I couldnt hold on ! The motor let go almost to the end of the first lap, and Eric hitched a ride out to get the trailer. I tell you we were two very dehydrayed, but happy racers when we drink that first gatorade, after stopping. And YES we drank the two beers after Eric got back with the trailer !

Firend of mine developed this system a feew years back for our Paramedics out in Vegas. He then sold the idea and it is produced as this system....

He tried to sell it years ago to some off road racers but it never caught on - Interesting idea and some possibilities. Even though it was a great race I am sure glad we dont run the SCORE July race anymore....I remember hiding uner the overpasses to run my truck with the a/c on just hoping we didnt have to go out on course for someone. As a side note though, I am pretty sure the swimming pool at the hotel had 2 tons of dirt in it after the race out there in barstow -

As the former owner of the Fresh Air Systems, I would add that the adoption of cooling has been slow in off road racing. Personally I would favor cooling the air going into the helmet before I would consider a cooling vest for a couple of reasons. First, it's cheaper. All you need is the cooler and an extra hose vs. the complete vest and cooler unit. Second, there are no pumps to go wrong on the air cooling. Lastly, anybody can build a air cooler unit for less than $25 bucks. Using an intermediate cooler, a 25 degree temp drop is pretty easy. In a Cup car, that has internal temps of a 130, and outside air of 100 the box would last approx. 3.5-4 hours. A simple 1.5" dia. copper pipe u bend that is placed at the bottom of the box is all that is needed.

During the second SCORE Henderson race, I entered my own class 8 truck. After our expierence in the black 55 Chevy, I installend a 3 gallon IGLOO drinking water jug in the rear bed area of the truck, with a clear hose to suck though. We filled the jug 1/2 way full with bottled water, and 1/2 full of ICE. I wasnt so worried as much about us, as I was about engine temp. Each lap, the 'ol temp gauge went up 5 degree's every 30 minutes. After 2- 80 mile laps in the record Nevada heat that weekend, just five miles from finishing the 2nd lap, we ran out of water (and ice). During our last pit stop, they refueled the truck, and I had them dump ice-chest water in the IGLOO. With one lap to go, and running second in class 8, We finished the race, and afterwards checked out the water situation. There was only 1/2 gallon of water left from the last lap. Get this: the two of us in the truck, had consumed 5-1/2 gallons of water in 240 miles of desert racing. And we finished second, one of only two class 8's to finish without over-heating. Our pit crew had a Toyhauler with AC, and they spent most of the day inside it with the AC on full, and listening to the race radio ! For some reason, Sal deside to not have any more 4th July races in Henderson.
