Trying to put in a new motor but with the current mounts, it leaves the holley carb tilted back about 10 degrees. It's a two barrel 350 cfm. How much of a problem is that going to cause, especially in the whoops or up hills?

Are you using center mount or side mount float? Which direction is the bowl located?

Side hung with the bowl in the front.
That should be fine. You'll just need to adjust the float level after you get it running. If it loads up on hill climbs, then lower the float level a little more. The worst case is that you will need to change to a racing float and bowl, but you may already have that, being that it is side hung.

It's not uncommon to see a shim under a carb in a boat application. If the motor has an aggressive tilt you might consider an angle / tapered spacer that gets the carb sitting flat.
These can be a biotch if your air filter to distributor clearance is already tight. Just another idea thrown out there.

Search for a Carburetor Wedge or Wedge Plate. Some companies call them Carb Adapter Leveling Blocks. They are sold in varying degrees are easy to buy via Jeg's and Summit if you can't find them locally.
