Here's one I built a long time ago for my Nova. Not a truck console, I know, but the same basic steps and there are plenty of pictures

Vinyl is not that hard to work with, just make sure you lay it out before hand and let it warm up a little. I did this work at probably a normal 70-75 degrees and it's stayed tight on the wood for the last few years. You can use 3M spray adhesive to adhere it in places it wont stretch properly. Just be careful not to make unterminated cuts because they can split later down the road. Try to make radiused corners when cutting.

I love those kitchen table builds!!! Just don't f-up the table with spray adhesive like I did. It cost me $5k in granite counter tops after the wife went into orbit over the mess I made.

The grade of vinyl and backing will have alot to do with how well it works and its "molding" characteristics. Choose a good automotive grade vinyl or "pleather" if you go that route. Also, I like to use a 1/4" closed cell foam base that is shaped down to around an 1/8", it tends to give a better finish. Make sure you use an automotive grade adhesive (they withstand heat differences better)... you can either buy it by the rattlecan (small jobs) or run a gallon through a glue pot... adhesive is key to a long lasting product.

Unless you plan on sewing in exposed seams and sectioning the console, you'll need to be patient with the vinyl. As mentioned above, letting the vinyl come up to temp. and having a heat gun available will be some tools you'll need.

    Good luck.... Patience is key.

In addition to all of the above, I would recommend going down to your neighborhood Harbor Freight and picking up an electric staple gun.
