Langosta Cooking Technique

Want to do Langosta right for my holiday meal, what is the difference between Puerto Nuevo, and Mama Espinoza, Or any other offerings you might suggest. Deep fried or seared with lard or butter.
Just a simple meal with fresh tortilla salsa and onion, beans.. Do they export the Langosta to US Markets,

I heard a rumor that Puerto Nuevo is no longer selling "fresh" lobster but it's "imported"
When its in season its fresh local lobster. The rest of the year its imported.
