I have four never mounted bfg 37/1250/17 race projects that are at least 8 years old. They have been stored inside and still look new. How old can they be before they are unsound for racing?

You have nothing to worry about, even Americas tire mounts tires 10 years old. Mount them and run them. Consider the tires on the back of my class 11 are over 25 years old I doubt you have anything to worry about

The tire compound is probably hard and the tire may begin to chunk, causing a lack of grip. Just be mindful of tire seperation at high speeds. Other than that, not much.
